if you near the same latitude as atlanta, GA I would plant whatever sounds good to you you should have plenty of chill for any apple in your area.

I was thinking about buying a p touch label maker and sticking those on to pawapaw rose tall labels as I have heard they last a long time. I will try that and let you know how it works. I know some people who swear by it.

Apples have been found to require much less chill than originally thought to leaf out bloom and fruit. Also They can't even agree on what constitutes a chilling hour because very little is understood about them. ( I can think of at least 4 methods of calculating them of the top of my head.) The tree to the right looks great! Not sure about the other one though. Hopefully some experts will chime in. But I do think you are the right path I have just never dealt with a major pruning project like that.
