I would use either the cleft or a the rind (bark) graft.

I was thinking about buying a p touch label maker and sticking those on to pawapaw rose tall labels as I have heard they last a long time. I will try that and let you know how it works. I know some people who swear by it.

I don't think you'll find any rootstock that can stand being under several feet of water.

The tree to the right looks great! Not sure about the other one though. Hopefully some experts will chime in. But I do think you are the right path I have just never dealt with a major pruning project like that.
