My suggestion is to talk to your local orchard. Typically, if they press cider, they freeze some because it would go bad too quickly otherwise. At least that is how it is here in my neck of the woods. You might be right though...some of the "big boys" might not want to mess with such small...

I did talk to him at Maple Valley and he mainly sells scions for bench grafting in spring. That was my impression anyway. Apple Crops In Other Places
The orchard owners i've talked to around my neck of the woods have had their entire crops wiped out this spring. It was so warm then got to freezing temperatures and killed off the blossoms.

I'm going to try and grow organically. This year, I don't really plan on putting anything on them. I am more concerned with getting some peastone around the base and some ramial wood chips to cover the surrounding ground. I did get some humates and organic mulch to put around the tree when I planted...

I was going to suggest a Wickson, but it's a midseason bloomer. There might be some overlap though but i'm not sure how effective that would be.

I simply LOVE apples! I recently tried Pink Lady and it tastes wonderful, probably the best apple I ever had. As for the others, I enjoy pretty much any of them, I particularly like Red Galas and Golden Delicious. I'd like to try Braeburn and Honeycrisp, but they are quite difficult to find here in...

As far as an apple I can walk into any store and pick up, it's Granny Smith, hands down. I'm always in pursuit of a large, firm, and tart apple. Especially one that I can get from a local orchard.
I tried a Golden Nugget last year and really enjoyed that one.
