What zone are you in? Gala can be a bit prone to scab, but that's not too much of a problem if you grow them for cider / juice.

Many late-ripening varieties will hold on to their apples if you let them, however a much simpler method of providing bird food is to pick the apples as normal and keep them in a cold garage, then put a few out on a table, sliced in half, over the winter months.

You could try cutting a few inches off the top or off a main shoot to see if the wood inside is green. At this stage the best thing to do is probably to wait for spring, if the tree is alive the buds on the stem and main shoots will start to swell. Good luck!

Northern Spy was indeed used in the development of the MM-series rootstocks, but you will not get a MM111 rootstock from planting Northern Spy pips. I am not certain of the answer but Kingston Black is a bittersharp cider apple, not very palatable, so I would not expect the juice to be of use for sweet cider.

In fairness to Trees of Antiquity, collecting and shipping small quantities of scionwood is unlikely to be cost-effective on a small scale. I'm surprised Cornell doesn't have these varieties.

Try GoldRush or Enterprise. Fuji and Granny Smith are also very late.

I think this variety is held at the UK National Fruit Collection at Brogdale Farm. If you are in the UK or EU you should be able to request graftwood from them (there is a nominal cost).

I think Newtown Pippin can be a bit susciptible to cedar apple rust too.
Ashmeads Kernel, mentioned by Nevil, is probably a bit resistant.
Arkansas Black, Roxbury Russet, Winesap are all fairly resistant.

I would say not Kidds Orange Red, because the stripes look a bit too prominent.

It's quite difficult to identify apples at this point in the season, better to wait until they are ripe! It does sound like it could be one of the red-fleshed varieties.

You should always cut back 1-year bare-root trees on planting, with the possible exception of those on very vigorous rootstocks.
