cox's orange pippen dwarfing rootstock question

In the book, "[u]Sweet and Hard Cider: Making It, Using It and Enjoying It[/u]" Amy Proulx and Lew Nichols talk about some apple varieties, pros and cons etc. While this information was very general there was mention of growing Cox Orange Pippen on a dwarfing rootstock to limit the problems associated with it.
That was as far as the info went, somewhere I read that with many of the Cox sports that, when resistance was obtained the flavor came out too. Is there a happy medium? Has anyone successfully planted Cox Orange Pippen on MM or Geneva rootstock and lived to tell? Have they done it in Zone 5 or 6?
