Every year I never think about making cider until the mid and late ripening varieties start coming on. This year I decided to make a batch using summer apples and we were surprised how nice it turned out.
We used about equal apples of Akero, Gravenstein and Burgundy. It made a nice, light cider.
After that batch I decided to make another using just Pink Pearl apples. That variety is my favorite to eat and made a nice pinkish hued cider which was pretty good. Later I will make another batch of cider from red fleshed apples but make it with more than one variety.
We have 320+ varieties and I like to experiment with different mixtures.
