Bramely 20 care

Hello. 2 years ago I purchased 2 x 2 year maiden bush trained "Bramley 20" trees from Orange Pippin. One tree fruited this year and gave me 16 fruits, the other did not fruit but did produce some blossom. On the tree that produced, one of the branches was so heavy with fruit that it is now stuck in the downward position. I need to know if/when I can prune and how to go about it please. We generally have quite mild winters here in Spain (Costa Blanca area but inland) Any advice would be gratefully appreciated.
