You should consider growing some cider apples. There is a demand and you could probably put a premium on them.

I've had Hauer Pippins that I harvested on Halloween sit in the fridge until April or May and still have crunch. Large, firm, tart, late apple that lasts a heck of a long time. I'm in 6a basically on the border with 5b.

There is a big listing of apples places on this website. Click orchards under the Orange Pippin logo at the top and find one close to you.

Cut an apple in half. If the seeds are dark and free, it's ripe. If they aren't dark and are held into place pretty well, let them grow more.

Plant a crabapple to pollinate your trees. Crabapples in my collection include Nehou, Siberian, Hewes Virginia, and Whitney (are all good polliators). Nehou and Hewes bloom the longest. I believe that Shiawassee does as well, but it's a Snow/Fameuse offspring. I'm trying to remember what other ones were listed as growing as "true to seed" in Tom Burford's book that i've been reading.

Find your local farmers market. Find your local orchards. Buy some of each apple you can find and take notes on what you like and what you don't. I know it seems pretty basic, but it's a good place to start.
