I will concur with a few posts on here that Angry Orchard is a good cider. Here in NY it is easier to find ciders than other places around the country that I've traveled to. Pinch off the blooms and let the tree concentrate on growth and root development for the first few years.

There is a great youtube video by dave Wilson nursery that has an apple block in Irvine ca. They planted 33 or so "high chill" apples and got apples off 31 varieties. It's worth a watch.

Chances are that it is not a "variety" that's being propagated, such as Grimes golden. Its more likely a chance seedling that grew up and now shares traits of apples that you know.

I have a couple sweets, bing and stella, and am in zone 5b. We are close to Lake Erie and regularly have temps below 0°F. There are a couple commercial orchards near me that have both sweets and sours.

Probably more to do with soil conditions than cold.

Planting for commercial production, I would stick with the varieties that people want in the big stores, such as Pink Lady, Honey Crisp, or what ever is popular in your area. I like to size control my trees and will often top them at about 5 feet to stimulate growth, which i will then prune to get branching where i want it.
