The sulfur dioxide will leave a bad taste in the finished cider if too much is used. The experienced cider people say "better to use to little than to much".

No, I do not want "Brett", as to much will spoil the cider. I used a half-dose of sulfur dioxide to kill the "bad" yeasts.

Next late winter/early spring, pierce the bark just above a bud with a pocket knife. This will cause bud to branch.

M111 is doing well for me in western Ill. Soil is clay loam. I have started some trees on b118, but its to early to determine results.

1) Graft 150 more antique apples, increasing my # of varieties from ~ 30 to ~ 50.
2)dig up, plant and cage ~ 75 apple trees grafted last year
3) Prune, train, etc.
4)Hopefully, with enough production from by trees planted in 2008, try my hand at fermenting cider for the first time.

Here is a link of cider variety descriptions. I started a cider orchard 5 years ago, acquiring my initial trees from Vintage Virginia Apples, and had very positive experiences with them.

I started my orchard with one year old whips; now I am expanding it with grafts from the original trees. Its a lot cheaper buying 300 grafts than buying 300 whips. You may need to grow the grafts in a nursery for a year, then transplant to orchard as one year whips.

Cut strips out of aluminum cans with tin snips, & scribe the description with a sharp awl, nail, etc. Poke a hole in each, and hang with aluminum or stainless wire.
