New Plot

Hello Everyone,
I've taken on a new plot and am thinking about buying around a dozen different apple cordons, the main considerations are flavour and to have a succession of fruit over a period rather than yield - I was wondering if you could suggest some varieties which would fit the bill please. The plot has a long westerly facing wall and is pretty well sheltered, I am in the West Midlands (UK).
Is M9 rootstock the best one for sloping cordons.
