Scions for warm weather?

My grandad planted several apple trees years ago and after making cider from the apples this past fall, I am hooked on Apples!

I know that I need to prune a lot of the trees, but I also want to graft a few cider varieties onto them.

I know that some varieties of apples prefer cold weather, so my question is, do the grafted scions take on the requirements if the rootstock? Or will they each have their individual growth requirements?

Also, if anyone has any suggestions for cider apples varieties for the Tennessee/Kentucky area (zone 6b) it would be greatly appreciated.
